


Well it was a good 2 1/2 years on Remicade and now we are changing meds and changing lifestyle….. Again
I feel like as soon as things start feeling “normal” again for our little family, everything gets thrown back into another life challenge. I guess that is life though. We are no different than every other family out there struggling to navigate the ups and downs. At least we have each other. That is what matters most and I want to keep those close to me healthy as well. So why not share best practices!
I thought I’d start sharing a few of my found recipes with you all, because if we can find benefit to eating a low inflammation diet then maybe others can too. I know many of you are struggling from other ailments and since I’m meal planning and cooking already, I might as well share! It’s a lot easier than you think after the initial change in mindset and preparation. Here is what we ate for dinner tonight. It only took a few minutes with the frozen veggies too 😉
The base of this one was inspired by a Danielle Walker recipe but I modified quite a bit.
-Beanless, turkey chili recipe-
2 tablespoons olive oil
2 pounds pre-cooked turkey breast chunked
1/4 frozen bag of riced cauliflower
1/4 bag of frozen peeled sweet potato chunks
4 (4-ounce) cans diced green chiles
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoons fine sea salt
1/2 teaspoon pepper
1/4 teaspoon ground cinnamon
Cook above ingredients on stovetop for about 20 minutes or until sweet potatoes are soft.
While the above is cooking. mix together the homemade enchilada sauce by melting 3Tbs coconut oil and then whisking in 2Tbs arrowroot powder to thicken. Then mix in remaining ingredients:
4 cups chicken Bone Broth
1/2 c tomato paste , 1/2 TBS Chili powder, 1 tsp. Oregano, 1 tsp. Cumin, 1 tsp onion powder, 1/2 tsp salt
Mix both together and serve with optional – Cilantro leaves, lime wedges, crushed Siete grain-free tortilla chips, Dairy-Free Sour Cream and cheddar shreds (both bought at Whole Foods) for serving.
Liam ate the whole bowl. I was thinking you could probably even add a green pepper and red pepper for more veggies too!
You are also looking at SCD cheese topped bagels that accompanied. No dairy or grains and cooked in less than 30 minutes!
